Larry’s Basic Kansas City Style BBQ Sauce

This is my version of the classic red BBQ sauce.

1 tablespoon vegetable oil

1 cup minced onion – or shallots say maybe 2/3 cup

2 cup minced green pepper B or a whole green pepper B what ever

1 or 2 or 3 or how hot you want it B minced jalapeno peppers

2 tablespoons minced garlic

1 B 28 oz. can tomato sauce

2 cups ketchup

1/4 cup water B depending on how thick you want the sauce

3/4 cup Worcestershire sauce

2 cup apple cider vinegar

1/4 cup fresh lemon juice B only fresh

1/4 cup molasses

1 teaspoon to 1/4 cup Tabasco sauce depending on how hot you want it

1/4 cup Dijon mustard B I some times use a milder stout

3/4 cup brown sugar

1 tablespoon chile powder

2 teaspoon ground allspice

More salt and ground black pepper to taste put in the final sauce

Sauté the onions, green peppers and jalapenos in the oil until the things are soft and the onions are caramelized a bit (browned a little). Add a pinch of salt and pepper. Add the garlic and sauté for a minute or so B DON=T LET THE GARLIC BROWN. Dump everything else in and bring to a boil for a second. Simmer for a few minutes B maybe 10.

This recipe obviously makes a lot of sauce. It will keep in the fridge for a couple of weeks. And, it’s good on most every thing.

Slather this sauce on grilled stuff only at the last minute or so. Do not cook meat with the sauce on. The sauce, with all the sugar, will burn. Serve some in a bowl to slather on stuff at the table.

It is easier, but highly unethical, to simply buy a bottle of good BBQ sauce at the grocery store.
