Larry's Rubs

The amounts given are for proportions only. Adjust the total for what you are rubbing, or make a lot and keep it in the fridge. Most importantly, taste as you add spices to see what you like.

The rubs can be used on roasted things or grilled things.

The Cardamom adds a very savory almost sweet taste. I would not use the turmeric and cardamon together. I don't know why but I wouldn't.

Rub the meat at least a couple or three hours before, or best the night before, cooking and put in the fridge.

 

TUMERIC or CARDAMOM RUB great on chicken especially grilled chicken thighs.

1 tbs fresh ground black pepper -  less if you want less spice

1 tbs kosher salt - less if you want to be healthier

2 tbs granulated garlic

2 tbs granulated onion

2 tbs turmeric or

1 tbs ground cardamom

RED RUB

3 tbs paprika

1 tbs fresh ground black pepper -  less if you want less spice

1 tbs kosher salt - less if you want to be healthier

1 tbs dark brown sugar - use for a BBQ rub.  Don't use if you are going to grill; it will burn.

2 tbs granulated garlic

2 tbs granulated onion

1 tbs chile powder

1 tsp cayenne pepper or to taste

1 tbs creole seasoning or

1 tsp oregano

1 tsp allspice

1 tsp ground cumin
